WINEMAKING

The Apolloni Vineyards philosophy of winemaking encompasses the blending of old world tradition with the unique character of Oregon’s vineyards.

The Apolloni Pinot Noir is made in a traditional Oregon style, combining the best of old and new world’s winemaking. We use only French oak barrels for their unique aromatic character and gentle tannins, typically using between 50-100% new oak. In the European tradition, we believe in extended barrel aging ranging from 14-18 months to improve the approachability of the wine with smooth and well integrated tannins. We work in the winery with the same great attention that we manage the vineyard to produce perfect fruit. And with that perfect, hand-tended fruit, we can craft a supple, elegant Pinot Noir. 

The Apolloni white wines are made in traditional Italian-style: dry, with great fruit, and crisp clean flavors.  They embrace the flavor of Oregon’s grapes and bring them to your table. All of our whites are fermented at cool temperatures in stainless steel and do not go through malolactic fermentation to preserve all of the fruit flavors and aromas. These wines are manipulated as little as possible to bring the essence of the fruit to the glass. The shape of the bottle is in the Italian tradition, suggestive of the wine style.
